Magnificent Fiemme products and Desmonteghe
A week dedicated to the rural traditions of Val di Fiemme and its most authentic products: the two “Desmontegade” of Cavalese and Predazzo. Goats and cows will come back from the summer alpine pastures decorated with flowers and bells, bringing joy to all the villages.
During this week there will be several activities, like visits to alpine pastures and to cheese dairies to taste fresh milk and learn how to make the tasty Cavalese goat cheese and the famous Puzzone of Predazzo.
A gastronomic festival with special menus together with the initiative “A tavola con il produttore” to discover the secrets of brewers, butchers and dairymen.

In this atmosphere of environmental safeguard and respect, SMALL CHARME HOTELS,
BED & BREAKFAST, GUESTHOUSES, RESTAURANTS and CRAFTSMEN work together for the project “Tradition & Taste”. It focuses on rediscovering old flavors and knowledge, related to a quality offer, to Val di Fiemme history and its natural environment.
The project is dedicated to guests who are looking for an authentic vacation in family- run accommodations rich in charm and tradition or which feature the very best in bio-architecture and environment safeguard.
The quality of Val di Fiemme’s gastronomy is guaranteed by the direct relationship with the producers, by the fresh air and the clean water of Val di Fiemme, and by respecting the local tradition and old recipes.
Our RESTAURANTS are to be found in historical settings, and offer traditional local food prepared with care: fresh valley specialities of the season which will satisfy even the most demanding and curious of visitors in search of new tastes and flavours.
The best of our local produce finds its
way onto the tables of our restaurants where it is presented at its very best:
- cheeses, including the famous Cavalese goat cheese and the smelly Puzzone

Participants in the initiative have called on the services of experts for the drawing up of a set of standards, which allow PRODUCERS, RESTAURATEURS and HOTELIERS to guarantee the very best in terms of hospitality, style and genuineness, with a friendly and courteous touch. These are the essential ingredients of the Val di Fiemme, which has specialised in hospitality for centuries.
Quality inspections are carried out from time to time by experts in the sector to ensure that all of our guests are 100% satisfied with what they find.

The Dolomites cheese Route
A journey through the emotions created by a combination of holiday and taste.
The DOLOMITES Cheese Route slaloms its way through the true heart of Trentino, revealing some of the most interesting and beautiful aspects of Val di Fassa, Fiemme and Primiero.
The main theme is the rich dairy production, as well as a series of niche products wanted by a community which meant to keep unchanged life’s rhythms, territory’s love and natural heritage respect.
A journey on the Dolomites cheese route, is not just a journey into flavour but a discovery of space and time through all five senses. Valley by valley, you get the chance to contemplate landscapes, listen to sounds and silences of nature, smell perfumes hidden in your memories and you can touch with your own hands what you have always dreamt of living.
Val di Fiemme is renowned for cheeses such as Dolomiti, Fontàl and Valfiemme, its goat’s milk ricottas and the famous Caprino of Cavalese, to be enjoyed as the perfect end to a meal with a local honey.
After Passo Rolle you will find yourself surrounded by the NATURAL PARK of PANEVEGGIO-Pale di San Martino, where nature tells its history through a rich program of activities for adults and kids.
Taking part in the initiative are 72 associated businesses which, thanks to quality standards, are committed to enhance all their products.
This is a journey through the emotions created by the encounter of your history and our valley’s, while tasting different flavour and realizing that this could be only the beginning.

The magnificent Fiemme products and the “Desmontegade”
Gastronomic festival
The two tastiest weekends in Val di Fiemme, in the Dolomites of Trentino, take place in September with the Desmontegade of Cavalese and Predazzo. When goats and cows come back from the summer alpine pastures, there is an explosion of feast and colours which leads to a world full of beauty, knowledge and deep respect of mountain traditions and secrets.
This is the best time to celebrate the great quality of their milk enriched with the scent of high altitude flowers and to taste their delicious cheeses, especially goat ones.
Cavalese greets 350 goats decorated with flowers which parade through the crowded main roads.
On the other side, cows overrun Predazzo’s centre and start a festival of re-enactments of ancient flavours and crafts.
During the Desmontegade’s weekends there are planned several street markets, tastings, meetings with cheese producers, mountain hut excursions, bike tours, Nordic walking excursions, bovine and goats exhibitions.
Besides these two feast weekends, the gastronomic festival “The magnificent Fiemme Products” awaits for you in the Osterie Tipiche Trentine, Farmhouses and Restaurants of the project Dolomites Cheese Route. They will present typical dishes and old recipes made out of local products, many of them belonging to the Food Community of Val di Fiemme-Slow Food matched with the best Trentino’s wines.
