Stefano and Tomaso Toniolli have been running the Cantina Toniolli winery since 2018, even though their family already cultivated Val di Cembra’s terraced vineyards throughout the XX century. However, it was only in 2022 when the first bottles of their “Bait nr.1” sparkling wine were commercialised.
Once completed their education, Stefano and Tomaso started dedicating themselves to wine making and agriculture. Their vineyards grow on the steep slopes of Val di Cembra and are cultivated by hand. The implementation of integrated pest management, coupled with a deliberate limited production, ensure the high quality of their wines: from six hectares of land, the winery only produces 10,000 bottles and grows four varieties of grape (Chardonnay, Müller Thurgau, Schiava and Pinot Nero).
The line of products is called Baiti (cabins, in English), in honour of the great number of these small houses scattered in the rural landscape of Val di Cembra. Every label represents a different baito, as the aspect and purpose of these buildings varies depending on the vineyard and the distance from Cembra village.
Stefano and Tomaso invite you to visit their winery all year from Monday to Saturday (min. 4 people, upon reservation).
