The Paolazzi distillery was founded by Vittorio in Faver in 1962. After generations, the distillery has grown and the art of distillation is now mastered with passion by Martino, who has managed to expand the business and create high-quality products.

Interestingly, Val di Cembra distillers’ know-how derives from an illegal practice. After WW1, the distillation of pomace was prohibited. However, people kept doing it as it was an income for the economically-deprived families of the valley. That is why this process is now deeply rooted in the community’s identity.


The Paolazzi distillery belongs to the Cembrani D.O.C. consortium.
