The Gray Bear: a historic restaurant attached to a hotel housed in a 14th-century palace, whose walls exude stories of nobles, notables, notaries, doctors, and royal houses just a stone's throw from the palace of the Magnificent Community of Fiemme.
Our culinary proposal is based on excellent raw materials primarily sourced from our region and its small producers, respecting the rhythms of nature and the seasonality of ingredients.
The chef of the restaurant is Luca, a young and ambitious guy from our valley with several noteworthy experiences both locally and internationally, who has dedicated his expertise and passion with the aim of establishing us as a point of reference in the valley's dining scene. To support this, we have developed a wine list with over 140 labels from the best wine producers in the region, providing the opportunity to taste fine wines by the glass.
In April 2026, the Gray Bear Restaurant became part of the Michelin Guide Italy.
During the summer of 2026, every day from 8:30 a.m. to 10:00 a.m. it is possible to enjoy a delicious and rich brunch inside or outside the venue. Some offerings from the "Breakfast and Brunch" menu: Coconut Chia Pudding with fir and strawberries, Waffle with banana and chocolate, Sourdough with fresh tomato, meadow herb pesto, and lemon, Rustic Toast (sourdough, mortadella, and Fontal from Cavalese), Bruschetta with alpine gray ricotta and marinated eggs, Scrambled eggs with local cheese fondue, Golden Milk (milk, turmeric, black pepper, cinnamon, and ginger), Juice of the day, Rossini (strawberry puree and prosecco).
