Appetizer: strawberry grape gazpacho, citrus-marinated trout, candied spring onion and celery
Main course: Carnaroli rice with 30+ Trentingrana cheese and lactose-free smoked butter, raw venison with Rye flour from the Panificio Oss in Predazzo
Second course: pumpkin parmigiana, porcini cream, smoked ricotta and toasted hazelnuts
